Slice peppers and onions in julienne strips, layer in large baking dish or cookie sheet with sides, drizzle with extra virgin olive oil. Bake at 450 until soft and slightly brown turning occasionally. Approx 30 minutes. Par cook sausage links until almost cooked through on grill or in frying pan, (par cooking makes it easier to slice sausage). Cool slightly and slice each link the long way into three thin slices, then cut slices in half. Finish cooking in fry pan until cooked through and browned. Drain excess liquid. Drain liquid from cooked pepper mixture and add to sausage in fry pan. Stir together, reduce heat to low and let cook for approx. 15 more minutes. Serve on Italian buns or standalone.
